Can vegetables change your biochemistry?

The following research is interesting because it compared the effects of fruit intake with vegetable intake.
The researchers measured biomarkers of systemic inflammation in older adults (BPapaioannou B,D, et.al, 2022).
The participants were 233 older adults 65 to 70 years old.

 

This is what the researchers found.

The vegetable intake was associated with reduced levels of IL-6 a common inflammatory marker.
Surprisingly, fruit intake was not associated with any reduction of any of the inflammatory biomarkers tested.

Fruit contain fructose, which is sweet, and also glucose. That could be the reason, since elevated blood glucose has been found to increase inflammation.

Salads and soups with a lot of vegetables are very healthy meals.
